Mum’s Rum Balls

Ingredients:

125 g copha

1 cup sifted pure icing sugar

3 level tbles cocoa

1/2 cup desiccated coconut

1 egg

1/2 tsp vanilla essence

1 tblsp rum (or more!)

Melt copha in a small saucepan over very gentle heat. Allow to cool. Sift icing sugar into a bowl with cocoa. Add coconut and mix well. Make a well in the centre and add unbeaten egg, mix to a stiff dough. Add cooled copha, vanilla and rum. Mix until combined. Refrigerate until mixture is firm. Roll into small balls then roll into either chocolate sprinkles or coconut. Keep in fridge until using.
