Jackies Chocolate Cake

2 cups water

3 cups caster sugar

250g butter, chopped

1/3 cup cocoa

1 tsp bicarb of soda

3 cups of self raising flour

4 eggs, lightly beaten

Grease a deep 26.5cm x 33cm baking dish and line base with baking paper.

Combine water, sugar, butter, sifted cocoa and soda in a large saucepan, stir over heat, without boiling, until sugar is dissolved. Bring to the boil, simmer uncovered for 5 mins.

Transfer mixture to a large bowl and cool for 10 mins. Add sifted flour and eggs and beat until mixture is smooth. Pour into the prepared baking dish.

Bake in a moderate oven for approx 50 mins. Stand cake for 10 mins before turning onto wire rack. Spread with fudge icing when cool.

 

FUDGE ICING

90 g butter, chopped

1/3 cup water

1/2cup caster sugar

1 1/2 cups icing sugar

1/3 cup cocoa

Combine butter, water and caster sugar in a saucepan, stir over heat without boiling, until sugar is dissolved. Sift icing sugar and cocoa into a bowl, gradually stir in hot butter mixture, cover and refrigerate until thick. Beat with a wooden spoon until mixture is spreadable.
