Choc Chip Muffins


250g Self Raising Flour

1/2 tsp bicarb soda

pinch of salt

100g choc chips

115 g melted butter

115g brown sugar

2 eggs, beaten

150 ml milk

1/2 tsp vanilla essence


Heat oven to 190 degrees. Line a muffin tin with 12 muffin papers.

In a bowl combine sifted flour, bicarb, salt and Choc chips. In another bowl mix together the cooled butter, sugar, eggs, milk and vanilla. Fold the wet ingredients into the flour mix using 20 folds of your spoon. Do not overmix if possible as your muffins will be tough.

Quickly fill the muffin cases and bake in the centre of your oven for approx 20 mins or until golden. Cool on wire rack. Makes 12
